Flipping Fantastic Einkorn Crepes


  • 75g Einkorn Flour
  • 2 large eggs
  • 1/4 teaspoon sea salt
  • 1 tablespoon maple syrup
  • 120ml whole milk
  • 1 tablespoon melted butter


  • Whisk together flour, salt, eggs, maple syrup, milk and melted butter
  • Heat an 8″ frying pan and lightly grease with oil
  • Pour 1/8th of the batter into the pan
  • Tilt the pan so that the better covers the entire pan and cook for about a minute, or until the edges of the crepe begin peeling away for the sides of the pan
  • Flip and cook for another 30 seconds or so, or until both sides are nice and golden
  • Top with your favourite toppings, such as sugar, lemon, honey, or fresh fruit and yogurt

Tip: Make sure your pan is nice and hot before adding the oil and crepe mixture
